Title: Potato in bhaji - why?

Can somebody please tell me why all the recipes for onion bhaji include a piece of potato finely diced or in matchsticks?
It often seems that the potato is such a miniscule quantity alongside the onions i wondered what purpose it serves.

I only ever use matchsticks following the IG Demo I had, When I asked why they use potato they replied it helps to make the bhaji crispy.

Hi, CA's recipe doesn't include potato and in my opinion is the best out there! Why not give it a go?

Maybe they use the starch in the potato to "glue" it all together better ?! Basically as a binder.

I don't use potato and the gram flour, water and/or oil acts as the glue.
