Now that spam is off the menu for a while time to post up what i got up to at the weekend. I eventually made Stephen Lindsey's Punjabi Masala and very nice it was too. Recipe and review posted here:
http://www.curry-recipes.co.uk/curry/index.php?topic=8947.0 (http://www.curry-recipes.co.uk/curry/index.php?topic=8947.0)
I would strongly recommend it for a nice change particularly if you like a tandoori dish with a tomato background. Of course i took the necessary porn pics just to bring a smile to those who were equally p*****d off as i was due to a severe dose of dross the entire weekend which has for now been addressed :D
The Punjabi ingredients:

Next up the finished dish:

And a little close up to show the texture. Not quite as red as SL's but i was a bit frugal with the colouring ::)

This dish of course deserved to be accompanied by a good rice so i chose my keema rice, just like my local make it:

Having had great success with the mushroom bhaji as per the little india vids this seemed a natural side :P

The whole ensemble together:

Dished up and ready to be devoured after a few leffes down the local ::) ;D :P

But the weekend didn't stop there. Last night i fancied something a little hotter so i opted for a chicken vindaloo with some freshly chopped green chillis added towards the end to give the dish a bit of attitude. Main reason for this was that i wanted to try something to modify the texture of the sauce slightly in an attempt to replicate the sauce from a local take away that i have patronised for the last 25 years or so. More about that in another thread at some point. The then chef now owns the restuarant and i must take him up on his offer of spending a day in the kitchen.
Anyway, less waffle. I make no apologies for the mushroom bhaji appearing yet again. I really am impressed with this dish. Last night i added extra fresh garlic while frying the onions and added garlic puree towards the end of the fry. This gave a totally different finish and the garlic flavour came through really strongly, just like another local BIR who do a garlic mushroom dish. I'm sure jb knows the one to which i refer and I recommend he try this little trick :)
The main event, very pleased with the texture change and in line with what i suspected

The ubiquotus "garlic" mushroom bhaji AGAIN. I nearly went and bought more mushrooms tonight ??? ::)

A different rice tonight. Special rice relyiing on the onions and peas to provide sweetness with a hint of coconut and a lovely egg flavour

Supper last night before i tucked into to it ;D :P

Have made an Elaichi NIS tonight and i'll be warming that up in a mo just to polish off the pre-cooked onions and peppers and the left over rice. Mustn't waste food now, must we?? ;D I may just tag that on the end once i've eaten it ::)
Now the week wouldn't be complete without this now, would it?

Looks great CH - glad you liked the Punjabi Masala!
All looking great as usual,I must try the punjabi massala next time I get my curry pans out. Those garlic mushrooms you described are superb,I always have them madras strength from the restaurant,my wife moans I stink for days!!
Glad the spam seems to be over,I've never seen anything like it,all credit to the guys who cleaned it up.
a true feast there CH.
You've been very busy! The special rice and garlic mushroom bhaji look very tasty indeed. I love keema rice but get my local to do keema peas rice. It's almost a complete meal for one but goes especially well with either mushroom or brinjal bhaji. :)
That looks just awesome, its amazing what a bit of spam can do! :P
Thanks for all the comments guys. As you can see, the kitchen was definitely spam free, unlike the forum >:( >:(
Hopefully it's all sorted now though

A dish most definitely worth trying jb. Try adding a tsp of garlic puree part way through cooking the mushrooms and see what a difference to the garlic flavour it makes on top of the fried garlic slices :) You'll love it, but i doubt the wife will ;D . And add a bit of chilli powder with the mix powder and you'll be somewhere in the area of the spices garlic madras mushrooms :P

Now there's a thought ::) Peas in with my keema rice! A good portion of this plus a good portion of mushroom bhaji or my brinjal bhaji will indeed be a meal on its own :P. Add a good main and that's BIR todays running with minimal cooking time = more browsing time ;D ;D
Great CH
Pure CURRY Love your enthusiasm

That's the trouble with the forum Michael, the quality of the cooking on here and the enthusiasm is simply infectious ;D
Dammit, CH - that is pure mouthwatering class.
Just the look of those dishes puts the local BIR I dined in last week to shame, and I have no doubt that the taste does too.
Had I not just consumed a lamb vindaloo and vegetable side I constructed earlier, I'd be banging away at the stove right now on the strength of that porn!
Why thank you SD. Nice of you to say so. I'm glad i managed to get your juices flowing and you're now suitably moist ;D ;D
I was happy with all of them and would have paid for them so they couldn't have been too bad :) Why an earth would you banging pans since you'd already satisfied your curry habit with a lamb vindaloo and side which i'm sure would have been up to the normal high CR0 standard ;)
Just having the left overs from the vindaloo, sf rice and garlic mushroom bhaji :P :P
I must have a dig around the search facility and get these recipes. I've got the Punjabi Masala recipe, but the keema rice, special rice and mushroom bhaji look fantastic too!
Thanks for the heads up on the mushroom bhaji - haven't made that before, and I like the idea of stinking for three days aftewards ;D - local supermarket has mushies on special for AUD 7 a kilo at the moment - they aren't the big white tasteless ones, much smaller and browner and flavoursome so probably ideal for the task.
I did a search and downloaded a brilliant recipe from 2006 from Fat Les, any thoughts on a more up to date one? Looks fine to me. ;)
CH where did you get the recipe for mushroom bhaji please.

Sorry I didn't think there would be to much interest in them so i haven't posted the recipes. I will do so in the next day or so. They're simple but effective and quite tasty too, but no doubt there are better ;)
I make a mushroom bhaji but always up for trying another variation ;)

No interest? I think you underestimate yourself, mate! If the dishes taste anyway as good as they look, they'll be delicious! :)
And, Stephen, I'll be trying your Punjabi Masala very soon! I'd be interested in your Mushroom Bhaji recipe too.
