Title: ever been to india ?

just interested to hear from anybody who has eaten in a restaurant in india.  i went their couple of years ago delhi agra bombay goa, all the dishes i ate were all completely different. there was no sign of the so called base sauce, but just the right amount of herbs and spices. from what i could gather.  i no longer eat in bir restaurants for three reasons frozen tasteless meat, stale herbs and curry soup that they put into every sauce .lets do it right!

Nothing wrong with that - from time to time.

But the whole point on here is to be able to duplicate the curry house taste at home. No claims to the contrary.

Hi oscar, I think Mark meant more that your post won?t find much sympathy in this forum as alot of people are trying to recreate a BIR tastes.

Im sorry youve had some bad experiences with B.I restaurants, we are trying very hard to create the tastes of the best BIR?s and there are some excellent ones around.

If you check out the BIR recipe section you will find recipes which are far better than your average restaurant and of course, you can decide how fresh the ingrediences are.

But I suggest that Oscar has made a good point. The dishes I've eaten in 4 or 5 star hotel restaurants in North India were out of this world. As much as I like BIR food, it can't compare with the real (Indian) thing, which is generally in a different league.

Some BIRs are tasty and good quality, for what they are, in their own way, though. Keep looking for some of the better BIRs.

On the tv programme Delhi Belly, they showed an Indian chef cooking in his restaurant.  It was a popular restaurant.  He prepared bases.  I think there were 3 in total.  One was onion.  Not sure of the other two.....I was switching back and forward to watch a rugby match at the time.  Not sure if the others were tomato and spinach.  Did anybody else watch it?  Anway, he did say that he cooked the bases for hours on low heat.  I mentioned this before in the thread discussing the programme.  Anyway, my point is that they do use bases in India too if this guy's restaurant was anything to go by......

They don't do sauces out in the villages - it would be a waste of time. And those are the 'authentic' dishes.

I always look to Madhur Jaffrey (or even Floyd on India) for examples of authentic recipes because they involve the locals - I've never seen a sauce or gravy in her (his) programmes :)

Indeed, the driving goal of this forum is to reproduce BIR food. It is 95% focused on that aim, all else is secondary.

I totally agree with Mark here.

This forum was setup to be some where that BIR cooking could be discussed but over time it's also evolved to included authentic and Chinese etc..

This forum is the only place to come for BIR recipes and chat, I doubt any members here have anything against authentic cooking but thats not it's primary purpose.  There are plenty of forums and chat groups that mainly focus on authentic cooking like:

I'm not sure you're being very encouraging to new members here!  And certainly not encouraging people to post!   ;)

Have England been knocked out of the World Cup or something!!??  8)

Poor old Oscar has probably been scared off for good!  Come back Oscar and check out those threads on Authenic Indian Recipes!   :D

Hi Les,

If I went to one of the forums or the UK Indian newsgroup I linked to and said that authentic cooking is bland rubbish and let me show you that BIR is better I can pretty much guarantee the response I would get would be a lot worse than what Oscar has received here  ;)

I wouldn't want to discourage any new members from joining or posting but I don't see what sort of response he was hoping to recieve, I mean one look at this forum and it's pretty obvious what it's about  ::)

Oscar's post was slightly deragatory about the purpose of this forum, hence my rather curt reply.

Also I felt the clear purpose of this forum needed to be stated, if someone is purely interested in authentic Indian cooking then they wont get any joy out of this forum.

I would be leaning more to encouraging new members to try out our recipes. The food is great and  holds its own to any BIR or authentic style. Oscars had bad experiences with BIR (havent we all) lets get people into making their own curries then they can post and keep this great forum alive.

These days alot of people dont post on forums because they are scared to express their views, too many nutters behind the mice, luckily this forum is one of the best around and nearly 100% of the time it is tol(l?)erant and helpful to people with limited experience in cooking indian food and those needing help and advice. keep it friendly and cooperative. ;D Puts us above the competition by a mile.

True, but if someone walked into your front room and said "Huh! Who said this is YOUR house, then?" when you challenged them it would be hard to treat them as magnanimously as all that ;)

It's a pity this question appears to have been overlooked. If any of you haven't eaten at good hotel restaurants in India, do youself a favour and book a holiday out there. Otherwise, I don't see how it's possible to make a comparison with BIR food.

OK. Just for the record then, yes - if you include Pakistan (and that includes in hotels and not in hotels). I'd have also thought that having Sikh and Hindu friends, and knowing how they cook, also counts for some experience in this field. I've never seen a 'gravy' or 'sauce' in this context at all.

Thus, speaking personally, I do feel qualified to comment ;)

I agree. I'm sure food in Pakistan is superb too. I hope to go there some time. The only reason I mentioned hotel restaurants is that I've found them the easiest way to find top notch food.

I agree again. But, as with western food, a top restaurant will often serve finer food than most people can produce at home.

I don't know, for top restaurants in India with larger quantities to cater for, than folks at home. I assume they, too, use some pre-prepared sauces and gravies.

I'm sure you are. Everyone is, but for anyone who han't eaten at top restaurants on the Indian sub continent, you're missing a treat.

On the whole, it seems like that. I did think that comment right at the start of the thread was a little 'off' though (the "so-who-said-this-was-about-BIR-only") one :)
