Restaurant Chicken Tikka Masala
« on: July 23, 2011, 06:27 PM »
Hi All
A random video clip of a Restaurant Chicken Tikka Masala .
No recipe with this, just your imagination, the red sauce is Tandoori Mix and
definitely not Heinz Tomato Soup.
cheers Chewy

Nice video Chewy.

Do you know what ingredient that is that goes into the pan first? Looks like frozen paste/puree of some kind.

What I would give for a gas hob like that! An electric hob just doesn't cut it in comparison.  :)

Hi Ramirez
Sorry, like I said, I don't have the exact recipe for this, the paste was fresh not frozen,
straight from a tub in the fridge. It's just the sweet, coconut, and almond mix they make up in bulk.

Very good video, nice to see these. The first part (ie the paste) looks EXACTLY like the stuff the chef used when I had my lesson in a local takeaway. He took a big scoop from a tub,put it in a pan(this was a cold pan unlike the hot one in the video),gave it a stir and then added some base sauce. He let it reduce and then finally added a swirl of cream and some flaked almonds and sultanas, that was it easy as that. The Manager told me all of the ingredients were in the initial paste(he didn't exactly say what),I guess it's easier than added coconut, sugar etc every time the dish is made.

The thing I can't work out is what the second(runny) ingredient is,or why it's not just put into the initial paste to save time.Doesn't look like (thinned)tomato puree to me,I really don't know....Abdul I know you say you don't cook masala this way but perhaps you can take a guess???

Just looking on the website this video came from...

http://www.southtyneside.com/

I thought mmm pictures look nice then it occured to me I've seen them before somewhere...

Yep Mr.Huda's spices....Korma,tikka,mint sauce,bhuna look familiar?????

Hi jb,

Bloody good spot fella. So, who's copying who?

What a shame the restaurant wasn't confident enough to post it's own photo's.  It would make me think twice about using them knowing that the photo's aren't a true representation of their own food.

I remember some time back, some website used a picture of CA's Jal frezi I think which I believed that they had lifted from here?  It's just so wrong.

The crazy thing is, I bet that restaurant could equal if not better the food on display int the "library" photo's that they have used.

Ray :(

Hi 976bar
Ha Ha, a bit shaky I know, the cameraman was me ;D
Quite difficult, trying to grab some footage, when you have to dodge waiters and kitchen staff
rushing past you front and back and between your legs.

jb
the second(runny) ingredient is just red masala, plenty of recipes for it on here.
I own that domain and I sometimes use it's webspace to store videos that I don't want
to publish on youtube etc...
I designed that website a few years ago, and those photos, were just a filler until the restaurant
provided there own, they never did. Thanks for reminding me, I'll dump them off.
cheers Chewy

Oh ok mate I was just looking at the pictures and I could have sworn I'd seen them before(must get out a bit more I know).Didn't realise you actually took the footage..that's one thing I must try to do although they're a bit of a secretive lot round here! So it was just red masala?? I was just puzzled why they did it in two stages it did look like the chef was quite busy....thanks for the footage again though love these clips!!
